Today I've decided to share one of my favorite cost-effective recipes. We make this occasionally in the winter as it's a good comfort food.
7 Can Soup
2 cans sweet corn, drained,
2 cans diced tomatoes (the kind with green chilis and onions is especially good)
1 can Ranch beans (these are kidney beans with spices), drained
1 can pinto beans, drained
1 can black beans, drained
Mix all the ingredients together in a large pot and heat until warm. We serve this with cheese, sour cream, crackers, and corn bread. It is very similar to chili.
I've made this soup with many variations. I've cooked 1/2 lb of bacon first and stirred that in. I've added diced onion. I've tried different kinds of beans. I've cooked ground beef first and stirred that in. There are lots of ways you could change this up.
This soup makes enough for about 6 servings.
