This is one of my favorite quick and easy side dishes. I make this one frequently! It is not the cheapest side dish I make (artichokes are not inexpensive) but it's really good and very quick and easy. It also has so few ingredients that I thought it qualified as a money-saving side dish.

1 can quartered artichokes packed in water, drained
1/2 cup seasoned bread crumbs
1/4 cup grated Parmesan cheese
1 clove garlic, minced
2 Tablespoons olive oil
Preheat broiler. Mix together the bread crumbs, Parmesan cheese, and garlic in a 8x8 pan that can go in the oven. Put artichokes into the 8x8 pan. Pour bread crumb mixture over the top of the artichokes and then drizzle on the olive oil. Stir together until artichokes are well-coated.
Cook under the broiler for approximately 12 minutes until the bread crumbs are golden.
I serve this with a spicy mayo (recipe follows) to dip them in but it's really good by itself.
Spicy Mayo
2 Tablespoons mayonnaise
1/2 tsp sriracha (you can use more or less depending on your spice tolerance)
Mix together and keep in the fridge until you are ready to serve.
